Healthy Salmon Chowder

Healthy Salmon Chowder


Pam (non-stick spray)
1 t. butter
1/2 small onion finely chopped
2 stalks of celery finely chopped
Bouillon cubes (optional)
1 cup potatoes diced (about 2 med)
1 lb Salmon1 cup peas
1 cup corn
4 cups skim Milk
1 cup Fat free half&half creamer

Spray soup pan with Pam, and saute onion and celery in 1 t butter. Once the onion is 'clear' add the potatoes and bouillon cubes. Then cover with water, just enough to cover potatoes. Bring to a boil and cook until potatoes are tender. Add the salmon and poach it in the water. Break it up gently into bite size chunks. Add the remaining ingredients and bring it to a high simmer. Then remove from heat so that the milk does not break up. Add fresh ground pepper to taste. The salmon can be replaced with any other type of fish. You can even use left over fish. Note: You can used canned salmon as well. I used frozen vegetables but I'm sure you can use canned or fresh. I did not say how many or what type of bouillon cubes to use because that is a preference for taste. This served my entire family. (we have 8)Enjoy!
